Curry with chicken and broccoli

  • Olive oil1 tbsp / 10 g
  • Onion0.5 small piece / 35 g
  • Garlic1 clove / 4 g
  • Ginger root1 tsp / 2 g
  • Red chili pepper1 piece / 5 g
  • Curry paste1 tsp / 10 g
  • Chicken breast75 g
  • Broccoli7.5 florets / 150 g
  • Tomato passata10 tbsp / 150 g
  • Light coconut milk (Real Thai)75 g
  • Basmati rice10 tbsp / 100 g

Preparation instructions

  1. Heat olive oil in a pan and add chopped onion, garlic, ginger, chili pepper and curry paste. Sauté until onion becomes translucent and spices release their aroma.
  2. Add diced chicken and cook until slightly browned.
  3. Add broccoli florets and mix well.
  4. Pour in passata and coconut milk. Bring to a boil, then reduce the heat. Simmer until broccoli is tender.
  5. Serve with cooked rice.
