Curry with chicken and broccoli

- Olive oil1 tbsp / 10 g
- Onion0.5 small piece / 35 g
- Garlic1 clove / 4 g
- Ginger root1 tsp / 2 g
- Red chili pepper1 piece / 5 g
- Curry paste1 tsp / 10 g
- Chicken breast75 g
- Broccoli7.5 florets / 150 g
- Tomato passata10 tbsp / 150 g
- Light coconut milk (Real Thai)75 g
- Basmati rice10 tbsp / 100 g
Preparation instructions
- Heat olive oil in a pan and add chopped onion, garlic, ginger, chili pepper and curry paste. Sauté until onion becomes translucent and spices release their aroma.
- Add diced chicken and cook until slightly browned.
- Add broccoli florets and mix well.
- Pour in passata and coconut milk. Bring to a boil, then reduce the heat. Simmer until broccoli is tender.
- Serve with cooked rice.
